Foodie Friday: Simple Summer Salad



I absolutely love all the fruits and vegetables of Summer. A couple summers ago I had dinner with a friend of mine in Memphis and she made an amazing (simple) salad that has been a favorite of mine ever since. The first time I made it myself I ate the entire thing in one sitting (since it's a salad I don't feel that guilty).

Ingredients:
2 Cucumbers
2 Large Tomatoes
3 Tbsp Balsamic Vinaigrette
Feta Cheese






Preparation Instructions:
Wash all your vegetables thoroughly then chop into bit-size pieces.



Mix the vegetables with the Balsamic Vinaigrette.


Place the mixture in a flat dish and cover. Refrigerate for at least 20 minutes.



When you're ready to server sprinkle with Feta cheese. That's it. Seriously, I told you it was easy.
