Dark Chocolate Cherry Cookies

Just because it's almost Valentine's Day doesn't mean you have to spend tons of money to make the people in your life smile. One afternoon I decided I wanted to make something special for my Dad and so these cookies were born. My Dad happens to love chocolate covered cherries and chocolate chip cookies. The combination is incredible and I actually ate half of the cookies before he got to try them. Opps!

But we all know the way to a man's heart is through his stomach and the way to make a women smile is chocolate so this is a winner regardless of who you have on your love list this Valentine's Day.

* This recipe was adapted from Nestle Toll House dark chocolate chip cookie recipe.

Ingredients:
2 1/4 C all-purpose flour
1 tsp baking soda
1 tsp salt
1 C butter, softened
3/4 C granulated sugar
3/4 C packed brown sugar
1 tsp vanilla extract
2 large eggs
10 oz. package of dark chocolate chips
1 C dried cherries

Preparation Instructions:
Preheat oven to 375 degrees.

In a bowl combine the flour, baking soda, and salt.

In another large bowl beat the butter and granulated sugar. Fully incorporate the brown sugar and vanilla extract until creamy. Add eggs, one at a time.

Now, slowly add the dry ingredients to the sugar and butter mixture. Separate batter into 1-inch balls onto an ungreased baking sheet. I like to use Medium Cookie Scoop to get the perfect sized cookie, every time.

Bake the cookies for 10-12 minutes or until golden brown on top. Remove the cookies and place them on a cooling rack.
