Week in Review

I apologize for the lack of posts lately. I'd like to blame it on being swampped both personally and professionally but the fact is, I've just taken some time for some much needed R&R. Here's a brief recap of why I haven't been blogging.

My brother-in-law came to town for a couple days for some Fourth of July fun and to watch his favorite baseball team, the Cubs, take on the Braves. He's a little camera shy but here's a shot of the hubby and I.

Happy Fourth of July!

We spent a little time at the pool and hit up a couple local resturants and bars but for the most part it was really nice having some time to just chill with family. It's something we don't normally have the opportunity to do since we live so far from our parents and siblings.

One of my favorite things to do on the weekends is play "Test Kitchen."  We try a whole bunch of new recipes or make variations to our family favorites until we think they are perfect. This weekend we tried onion rings and fried pickles; two recipes we've never before attempted. The recipe isn't quite right (way too much batter) but I'm sure we'll try again and I'll be back here to blog about it once the recipes are just right.

We've also been trying out a new church and they show their services online so after too much fried food (see above) on Saturday our tummies encouraged us to watch online Sunday morning. So with a cup of Dunkin Donuts coffee (yum) we enjoyed church from our couch in our PJs.

After all that relaxation, I think a very productive week is ahead of us. Cheers!
